Whole Roasted Cauliflower

You might be thinking - why the heck is Nicole roasting a whole cauliflower? Well because its simple. delicious and looks kind of cool! 

Also, cauliflower is super nutritious. Did you know that it contains 77% of your daily vitamin C intake? Most people think of orange juice for vitamin C but there are actually great vegetable sources too! Its also a source of protein, vitamin K, and many more nutrients. 

This antioxidant rich vegetable is also anti-inflammatory making it a great food to incorporate more into your diet. Cauliflower is also very versatile and can be chopped and roasted, grilled, made into "steaks" and into rice. 

Try out this simple whole roasted cauliflower recipe and let me know what you think. And don't worry - this isn't intended to be a meal for one but a side dish to compliment your dinner. 


1/4 cup olive oil

1/2 cup tahini

2 tbsp honey dijon mustard

1 tbsp dried oregano

2 cloves garlic, minced

1 tsp onion powder

1/4 cup balsamic vinegar

1 tsp dried thyme 

1 head of cauliflower


Preheat oven to 400F

Combine all ingredients in a bowl expect cauliflower

Place cauliflower on a baking sheet and add mixture 

Cover well

Bake for 30-40 minutes until golden brown and cauliflower softened
