This meal is great to do when you are batch cooking or have a busy week. You can make it at dinner time, put it in the slow cooker or even prep the ingredients in a freezer bag and put in the slow cooker days or weeks later.
1 onion, diced
2-3 celery stalked, diced
3-4 carrots, diced
1 can of crushed tomatoes
1 cup of uncooked lentils OR one can of pre-cooked lentils. See directions below.
1L of vegetable stock
Spice mix of choice - I recommend basil and oregano or chili and cumin
1. Put all the ingredients into a slow cooker on high for 4 hours or low for 8 hours. You can also cook the night of in a saucepan. If you choose option two I recommend using pre-cooked lentils to speed up the process.
2. Cook until veggies and lentils are soft.
3. Serve with cornbread Enjoy!
