This recipe is the perfect mix of greens, grains, veggies and protein and makes a great salad for the summer!
1 piece of cooked salmon
2 cups greens of choice (I prefer salmon)
1 cup cooked quinoa
1 cup cooked sweet potato chunks
1/4 cup sautéed sliced red onion
Dressing of choice. I prefer a tahini dressing which is 1 tbsp tahini, 1 tbsp olive oil, fresh garlic and sea salt to taste, 1 tbsp lemon juice and water if needed to thin.
