Shredded Tahini Side Salad Looking for a quick healthy side dish to serve with at a BBQ or pack in your lunch? Try this gluten and dairy-free recipe that is sure to be the perfect healthy side to compliment your main dish!
1/2 small purple cabbage
3 large carrots
1 cup brussel sprouts, halved
1 apple, diced
1-2 cups of cooked chickpeas (depending on how much protein you need)1 avocado, sliced
Nuts and seeds oh choice
1/4 cup tahini
1/2 lemon, juiced
2 tbsp olive oil
sea salt and pepper to taste
water as needed (see directions)
Add cabbage, carrots and brussel sprouts to a food processor and blend until coarsely chopped. You don't need a food processor! Simply chop and/or use a cheese grater for the same effect. I recommend cutting the carrots and cabbage in to chunks to fit it them the food processor.
To make the dressing, combine all the dressing ingredients until well mixed. Add water slowly until the dressing is thin enough.
Combine dressing and salad ingredients.
Optional: add one or all of the topping options
