Stuffed Portobello Mini Pizza

Perfect as a side dish or appetizer at a party or BBQ!

Ingredients (4 mushrooms)

  • 1/4 cup goat feta

  • 4 tbsp nutritional yeast

  • 4 tbsp tomato sauce

  • 1/2 bell pepper, diced

  • 16 sliced of pepperoni

  • 4 portobello mushrooms


1. Preheat oven to 400F or you can put the mushrooms on a grill!

2. Place mushrooms on a baking sheet and add 1 tbsp of sauce, 1 tbsp nutritional yeast, 4 slices of pepperoni and add bell pepper and goat cheese.

3. Place in oven for about 15 minutes or until mushrooms are softened to your preference
