Cauliflower Rice Two-Ways

Cauliflower rice is a great gluten-free and grain-free option for grain based dishes. All you need is a head of cauliflower and some oil! Cauliflower rice is super simple to make and can be flavoured any way you want. Below are a Moroccan themed and Peanut themed based dishes. Enjoy!

Base ingredients: (makes enough for a serving of each flavour)

1 can of cooked chickpeas, rinsed

1 head of cauliflower minced (use a cheese grater or food processor)

1 red onion, diced

1/2 red bell pepper, sliced

1/2 yellow bell pepper, sliced

1/2 orange bell pepper, sliced

2 cups of green beans

3 tbsp of avocado oil


1. Divide half of cauliflower and chickpeas into two different frying pans with 1 tbsp of avocado oil in each frying pan. Cover on medium heat.

2. In another frying pan combine all veggies with 1 tbsp of avocado oil and cook on medium heat (covered)

3. Once veggies are cooked, divide into other two frying pans

Moroccan Dish


1 tsp turmeric

1 tsp cumin

1 tsp coriander

1 tsp chilli powder

1 tsp paprika

1/2 chili flakes (or more depending on preference)


Combine all ingredients in one of the frying pans

Peanut Dish


1 tbsp sesame oil

1 tbsp peanut butter or almond butter

1 tbsp tamari


Combine all ingredients and drizzle on other batch of cauliflower rice

Add water to sauce to thin if needed
