Roasted Veggie Tofu Bites


1 block of tofu, patted dry and cubed

1 tbsp pure maple syrup

1 tbsp tamari

1 tbsp gluten-free flour (coconut, brown rice or arrowroot powder if what I prefer)

2 1/2 tbsp avocado oil

2 cups arugula

2 carrots, sliced

2 parsnips, sliced

1 cup mushrooms, sliced

2 tbsp tahini

1/2 lemon juiced

2 tbsp water


1. Preheat oven to 44F

2. Combine maple syrup, tamari, flour, 1 tbsp of avocado oil and mix with tofu cubes

3. Line baking sheet and spread out 

4. On a separate baking sheet add 1 tbsp of avocado oil with carrots and parsnips

5. Bake everything for 30 minutes or longer and flip half way through

6. In a frying pan add 1/2 tbsp of avocado oil in a frying pan and cook mushrooms until soft

7. Combine all ingredients with arugula 

8. Make tahini dressing by combining tahini, lemon juice and water. Add more water if needed.
