Chickpea Curry Stew

Serves 2-3

Ingredients: 

  • 2 sweet potatoes, peeled and diced

  • 2 carrots, peeled and diced

  • 1 cup green beans

  • 1 can chickpeas or lentils, rinsed

  • 1/2 onion, diced

  • 1 can coconut milk

  • 1/2 cup tomato sauce

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tbsp chili powder

  • 1.5 tsp turmeric

  • 2 tbsp avocado oil

  • Optional: extra veggies like 1 cup spinach and 1/2 green bell pepper, sliced



Directions

1. Preheat oven to 400F

2. Add sweet potatoes to a baking sheet with 1 tbsp avocado oil

3. Bake for 30 minutes

4. While the potatoes are baking add the other tbsp of avocado oil to a frying pan on medium heat

5. Add onion, carrot and green beans to the frying pan and cover

6. After 5 minutes add coconut milk, tomato sauce, chickpeas and spices 

7. Cover frying pan and cook until vegetables are softened.

8. Once sweet potatoes are done, add them to the frying pan and mix
