These bowls were inspired by...leftovers. All you really need is some cabbage, lettuce, grains and whatever veggies you have leftover at the end of the week.
These are big servings and can eaten as a main dish or served as a side salad.
Below are two combinations. One is a bowl made from cabbage and other made from lettuce and both with a decadent peanut sauce and quinoa base.

Iceberg lettuce OR cabbage as base
1 carrot, shredded
1 beet, shredded
1 cup cooked quinoa
1/2 zucchini peeled or spiralized
Leftover shredded lettuce or cabbage (from base)
2 tbsp natural peanut butter (sometimes it helps to heat it a little to make it easier to mix and drizzle. But do this BEFORE adding the other ingredients)
1 tsp pure maple syrup
1 tsp tamari
water to thin if needed
1. Line a large bowl with cabbage or lettuce leaves
2. Add ingredients and mix
3. drizzle with peanut sauce.
