Beetroot Latte

Serves 2


1/2 medium beet, peeled and diced

1 tbsp olive oil

2 cups plant-based milk

1 tsp vanilla or 1 scoop of vanilla collagen 

2 tbsp pure maple syrup

optional: 1 tsp cinnamon


Preheat oven to 400F

Add beets and olive oil to a baking sheet and bake for 30-40 minutes

Before the beets are completely cooked add milk to a saucepan on medium heat

Heat until hot but not boiling

Remove beets from oven

Add all ingredients to a blender and blender until well mixed
