Lentil Walnut Meat Balls



Although I am not a vegetarian or vegan, I find it hard to find quality sources of meat and I also find it important to limit the amount of red meat we intake. I also generally prefer the taste of plant-based options, like legumes, over meat anyways and I am finding more people who feel the same way. That is what inspired me to try this recipe which actually stemmed from another recipe - my Lentil Walnut Stuffed Mushrooms.


This is a simple recipe that is sure to please the whole family. Even if its just yourself or another person, I recommend you make the whole recipe and freeze the extra "meatballs". Or you can have them in other dishes throughout the week since their mild taste would be perfect for a grain bowl or salad. 




Ingredients: 

1 can cooked lentils, rinsed

1 cup walnuts, crushed

1 cup fresh parsely

1/4 cup olive oil (leave some for baking sheet)

2-3 tbsp tomato paste

2 cloves garlic, minced

1 tsp onion powder

2 eggs

1/2 cup coconut flour




Process:

1. Preheat oven to 350F

2. Mix all ingredients and blend in a food processor

3. Scoop mixture into "meatballs" on a greased or lined baking sheet

4. Bake for about 15 minutes or until browned. 

Serve with brown rice pasta and tomato sauce!
