This is a really simple dish that you can have raw or heated up as a stir fry. For this recipe I am going to stick with the stir fry.
The base of this dish is kelp noodles. Now kelp noodles aren't actually your typical noodle and they do not contain any grains but are actually made from brown kelp! Because these are grain-free, they are perfect for people who follow a gluten-free or paleo diet.
Kelp noodles also contain important nutrients like calcium, iron and vitamin K and are also high in iodine.
They can be eaten raw so all you have to do is add some veggies, protein, fat and you are good to go!
-1/2 head of broccoli, diced
-1 cup carrots, diced
-2 radish, sliced
-1/2 bell pepper, sliced
-1/3 cucumber, cubed
-2 celery stalks, diced
-1/4 red onion, diced
-sesame seeds - for topping
-1 tbsp avocado oil or oil of choice
-1 cup kelp noodles
-1 tbsp sesame seed oil
-1 tsp tamari
-1 tbsp apple cider vinegar
-1 tsp maple syrup or honey
-1/4 tsp garlic powder or fresh garlic, minced
-1/4 tsp ginger powder or fresh ginger, minced
1. add avocado oil to frying pan and add broccoli, carrots, bell pepper and celery
2. Cook until soften
3. add all sauce ingredients together and stir
3. Add kelp noodles, cucumber, radish and sauce to veggie mixture and stir until well mixed
4. remove from heat and top with sesame seeds
