Crispy Sweet Potato Taco Bowl


-1 sweet potato

-1 tsp lime juice

-1/4 red onion, diced

-1/2 avocado, sliced

-1/2 red bell pepper, diced

-1/4 tomato, diced

-2 tbsp olive oil

-sea salt and pepper


-Preheat oven to 400F

Cut sweet potato into chunks and drizzle with one tbsp olive oil, sea salt and pepper

-Let potato bake for 30-40 minutes until the potatoes are crispy

-In the meantime, combine, lime juice, onion, tomato, bell pepper, rest of olive oil, more sea salt and pepper into a bowl and mix. 

-When the potato is ready combine salsa on top with avocado.

Other Salsa Combinations:

*Don't be afraid to make it your own, change up the quantities, and try new ingredients!

1. Black Beans and Corn

-1 cup black beans

-1/4 cup cooked corn

-1 clove of garlic, minced

-1/4 cup onion of choice (sweet, red, etc.), dic

-1/4 tomato, diced

-1 cup cucumber, diced

-1 tsp olive oil

-Fresh lime juice, sea salt and pepper to taste

-Optional: fresh cilantro

2. Mango Mint

-1/4 mango diced

-1 tbsp fresh mint leaves diced

-1 tsp fresh lime juice

-1 tsp olive oil 

-1/4 sweet onion, diced

-1/2 tsp jalapeno (or whatever you can tolerate)

-Optional: roasted tomatoes, mashed

And of course, avocado works well with every recipe!

AND...if you want to add some protein, try adding ground lean turkey, shredded chicken, and chickpeas or black beans to any of the recipes.
