Black Bean Lentil Salsa


-1 can cooked black beans

-1 can cooked corn

-1 can cooked lentils

-1 green bell pepper, diced

-1 red bell pepper, diced

-1 orange bell pepper, diced

-1 white onion, diced

-optional: jalapeno pepper, diced

-chilli powder

-sea salt and pepper

-1 lime, juiced


-1/2 cup sunflower oil

-1/2 cup coconut sugar

-3/4 cup apple cider vinegar


1. Place the Dressing ingredients into pot and bring to a boil. 

2. Whisk occasionally 

3. Let sauce cool

4. In the meantime, combine vegetables, add lime juice, chilli powder, sea salt and pepper to taste 

5. Combine all the ingredients and let sit over night! 

6. Store extra in a sealed glass container in the fridge
