Simple Grilled Shrimp Skewers



This recipe is SO simple and PERFECT for summer BBQs, especially if you're getting sick of the same old hamburger and potato salad. 


Ingredients/Supplies

-skewers

-5 cooked shrimp per skewer 

-Olive oil

-Veggies of choice but the following are recommended: 

  • red bell pepper, sliced

  • zucchini, sliced

  • mushrooms, halved

  • garlic cloves, whole

  • red onion, sliced

Directions:

-set BBQ to low heat

-place cooked shrimp and sliced veggies and garlic cloves on the skewer. Put as little or as much as you want of each ingredient

-Place on the BBQ for roughly 10 minutes or until vegetables have softened 


Optional: 

-there are no rules as to how to eat these.

  • you can have them as a side to a main dish

  • serve them with a side salad or brown rice

  • remove from the skewer and serve as stir fry, on a pasta dish or on a salad

Below is a picture of the shrimp and veggies removed from the skewer and fresh and local corn on a bed of baby kale with a olive oil and sun-dried tomato dressing.
