Simple Fajitas


-1 package of chicken or steak, sliced and cooked

-1/2 red bell pepper

-1/2 green bell pepper

-1/2 yellow or orange bell pepper

-1 clove of garlic, minced

-1/2 cup onion, sliced

-1/4 tsp cumin

-1/4 tsp coriander

-1/4 tsp paprika -1/2 tsp chili powder

-1 tbsp avocado oil

-wraps of choice (I like Paleo Wraps)

-1/2 cup coconut "sour cream"

-1/2 cup guacamole

-1/2 cup salsa

-shredded vegan or goat cheese

-1 cup cooked brown rice


1. in a frying pan add spices, pepper, onion, garlic, and avocado oil. Cover and cook on medium to high heat until softened

2. Remove from heat and mix in with meat of choice

3. Serve on a wrap with coconut "sour cream", vegan or goat cheese, salsa, guacamole, and rice
