I am extra excited to share this recipe because I got to parter with the amazing company, Second Spring to try out some of their sprouted products.

A couple of the reasons why I love their products is firstly, because they come from right here in Ontario, Canada and secondly because of the nutritional content of sprouted grains, beans and seeds.
Many people don't have the time or want to put in the effort to sprout their own grains, beans and seeds but with Second Spring you don't have to worry about that.
I remember when I received my first package of quinoa from Second Spring and noticed right on the packaging that there was no pre-soaking required. This honestly made me so happy because it cut out one more step from the cooking process which I know for myself and my clients, helps encourage healthy eating and cooking.

The first recipe I created for them is a Simple Black Bean Quinoa Salad that you can eat warm or cold and makes the perfect side dish with many meals! Make a big batch and bring to a family BBQ or divide into mason jars and pack it as part of your lunch for the week. The black beans and quinoa in this recipe mean that you will be getting adequate protein and healthy carbohydrates!
2 cups cooked Second Spring Organic Sprouted Black Beans
2 cups cooked Second Spring Organic Sprouted Quinoa
1 cup cooked corn
2 tbsp avocado oil
1 cup fresh cilantro, chopped
1 tbsp cumin
2 tbsp chili powder
3 cloves garlic, minced
1 lime, juiced
1/2 red onion, diced
1 bell pepper, diced
1 cup tomatoes, diced
salt and pepper to taste
1. Combine everything in a large bowl and mix well.
2. Serve and enjoy!
