Roasted Red Pepper Hummus


Ingredients:

1 bell pepper, sliced

1-2 tbsp olive oil

1 cup cooked chickpeas, rinsed

1 clove garlic, minced

sea salt to taste

1 tbsp tahini 


Directions:

1. Preheat oven to 400F or use a frying pan on medium heat

2. Add half the olive oil to the red bell pepper and cook until soften and the skin begins to blacken and peel a bit

3. Remove from stove or oven

4. Please all the ingredients into a food processor and blend until smooth

5. Slowly add water if needed to help blend

6. Enjoy!
