Potato Leek Crockpot Soup



Ingredients:

6-8 white potatoes, peeled and cubed

2 stems of leek, diced

1 carton of vegetable broth

3 stalks of celery, diced

water if needed




Directions:

1. Add all the ingredients to a crockpot

2. Add water if needed to cover the vegetables

3. Cook on high for 4 hours or low heat for 6-8 hours

4. Remove from heat, let cool a bit and blend in a blender until desired consistency

5.Enjoy!
