Carrot Hummus


  • two medium carrots, diced

  • 1 can of cooked chickpeas, rinsed

  • 1 clove of garlic, mined

  • 1 tbsp of tahini

  • 1 tbsp of maple syrup

  • 3 tbsp olive oil

  • water as needed


  1. Preheat oven to 400F

  2. Cover carrots in 1 tbsp of oil and bake for 30 minutes or until softened

  3. Remove from heat and place the remainder of the ingredients in a food processor until well mixed.

  4. Add water to thin if needed
