Buddha Bowl with Coconut Dressing



Ingredients:

  • 1/2 cup shredded carrots

  • 1/2 cup shredded beets

  • 1.5 cups cooked brown rice

  • 1/2 brick of tofu, cubed

  • 1 tbsp tamari

  • 1 tbsp apple cider vinegar

  • 1 tbsp avocado oil

Dressing

  • 2 tbsp canned coconut milk

  • 1 tsp avocado oil

  • 1/4 lemon, squeezed

  • 1/2 garlic clove, minced



Directions:

1. Add the tofu to a frying pan on medium heat with the oil, tamari, and apple cider vinegar

2. Cook until the tofu begins to brown

3. All all the other main ingredients together

4. For the sauce, add all the ingredients together and pour over bowl
