FARM and raised~

Raised on a family-owned farm near Tillsonburg, ON, Nic has always had a passion for food and nutrition from an early age. Her relationship with food was always around eating seasonally, locally, and intuitively, and these principles shaped her ideas around nutrition dramatically. Like any other kid, Nic loved all things pizza, creamy pasta and chocolate-- mmm- and it became evident quickly Nic had a sensitivity to Dairy. It’s funny how you can know something is causing you harm, yet because the effects of inflammation aren't immediate, we still stuff our faces and ignore the immediate symptoms.

Fast forward a few years, Nic completed both an undergrad, as well as a Masters in Rural Planning and Development with heavy research emphasis on local food systems. She had been experiencing digestive issues that she’d believed were tied with stress, and they persisted throughout her university career. Sure, she wasn’t being overly strict with regards to how she fed her body, but definitely wasn’t unhealthy either. Any normal university girl is going to have some cocktails with friends, eat out and have the odd treat, but Nic still wondered why she still felt so rough.

As her symptoms continued to get worse, Nic visited a Holistic Nutritionist, who changed her entire way of thinking about nutrition. She’d been eating relatively healthfully at the time, but this nutritionist taught her about balanced eating principles, and opened her mind to a lifestyle change entirely-- which she took on. Although she was eating the best she had been her entire life heading into Grad school, something was still off. This time, she visited a naturopathic doctor to learn she had food sensitivities toward many of the foods she was consuming regularly. This constant inflammation created a leaky gut and she was now worried that she would become sensitive to even MORE foods- or worse- if she didn’t make a change.

Nic was eventually diagnosed with Non-Hodgkins Lymphoma in 2017, a rare but thankfully slow-growing lymphatic cancer. This was the ultimate proof that by not listening to her body, and not eliminating the foods that consistently spiked her inflammation, she had eroded her health and liberated disease to flourish over time. 

She had always been super passionate about food from a culinary and nutritional perspective, but now Nic was learning that it's not just healthy foods that cultivate health- mentally, Nic was learning the importance of perspective to facilitate the healing process. This diagnosis forced Nic to become more in tune with her body and use this intuition to address other health conditions, like her younger self's digestion issues. Stress had contributed to the decline in her health, and she realized by fixating on the little things in life, she was helping to pile it on.

Nic has since worked with herbalists, naturopathic doctors, and oncologists to take her health into her own hands. Her approach to nutrition has shifted dramatically since her NHL diagnosis, and now focuses on listening to the body, eating intuitively and achieving balance- physically AND mentally. These principles have also shaped her practice: Nic encourages sustainable lifestyle change with her clients in a non-restrictive manner, while personally coaching on nutrition and lifestyle changes that won't create bodily resistance to help them feel their best. Combing a Holistic Nutrition Certification, Master's Degree in local food systems, and personal, intuitive health journey into one, Nic brings a unique perspective to her educational resources and one-on-one coaching packages. Nic’s personal journey also shows her clients and following that you can still be healthy and feel great, while managing those curveballs life throws your way.
